What is it ?
We call it ‘caponata’. An Italian vegetable ‘sauce’
almost beyond description. Wonderful as an appetizer
and is very versatile to cook with… on pasta of all kinds,
omelets, baked potatoes, BBQ’s, lasagna, pizzas…
let your imagination run!
Is
it 'spicy hot' ? No, not our ‘original’
style. If you cook with it, the flavors do 'brighten up' a bit,
but only to an enjoyable level. Now if you 'want' a nice spicy
version... we make one! We call it our ‘mama’s Bear
Sauce’, and its ‘just right zingy’ !
How
long will it last? - Do I need to refrigerate it?
It will last for at least 2 years on the shelf, and can be refrigerated
safely for weeks (or until someone discovers it!)
Just remember to put the
lid back on.
It
tastes so good, it must be very fattening ?
Actually not! Only 100 calories in a 4 oz serving and
only 5 grams of fat. There are 4 servings per pint.
How
do you get the vegetables to be so 'crunchy'?
The cooking process is done very quickly, with the entire batch
reaching the boiling point in about 15 minutes, so the vegetables
are not 'overcooked'.
How
do you get so much flavor in it? The chemical
action of the vinegar brings out a natural sweetness from many
of the fresh vegetables, and the interaction of all the different
ingredients is nearly magical. But that's part of the secret
recipe!

of folks don't know its there, even after you've told them.
But that's just part of the way the flavors interact to create
a real surprise ... you'll just have to taste it to understand
:)
So
which is better?, the 'original' or the 'vegetarian' ?
I prefer the 'original' even when cooking chicken or fish, but
everyone seems to have their own favorite. Its nice to have
to chose between two that are both yummy! Some folks though
are allergic to 'tuna', and others chose the 'vegetarian' because
of diet or personal preference. We're happy to offer both!
